Understory is a new culinary residency at Avant Garden, created in the wake of Third Kingdom’s closure.
For those who knew it, Third Kingdom was our sister venue, NYC’s only all-mushroom restaurant — a singular dining experience devoted to the depth, beauty, and range of fungi.
That work continues here.
It begins with the return of select Third Kingdom dishes and will grow into a focused series of menus and experiences centered on forest-driven cooking: mushrooms, preservation, fire, and the layered flavors of the forest floor.

Join us for a special 5-course dinner centered on rare and wild morel mushrooms. Crafted by Chef Juan Pajarito, the menu will explore the depth, seasonality, and flavors of the forest floor.
For this evening, longtime guests and local foragers Isaac and Meredith of Catskill Collectors are bringing an extraordinary fresh haul of wild New York ramps, harvested after years of dedicated sustainable foraging. Their ramps will be woven throughout the menu, paired with the morels in a way that feels immediate, grounded, and deeply tied to place.
